日本での一般的な方法としては、麺を直接スープに入れずに、他の
鍋で茹でておき、ラーメン丼に入れて、その上から熱いスープを注ぎ
ます。麺を直接スープに入れると、麺の粉くささがスープに移るから
です。
それにしても、約1時間も掛けるとは　さすがにフランスグルメですね。
